White Chocolate and Vanilla Cranberry Cookies

These became part of the Christmas cookie medley I gave out to my co-workers. I originally didn’t intend to add in the vanilla chips, but I only had about 3/4 cup of white chocolate chips at home, and the local grocery store had run out of white chocolate chips.

White Chocolate and Vanilla Cranberry Cookies

1 cup butter, softened

3/4 cup packed brown sugar
3/4 cup white sugar

2 eggs

2 teaspoons almond extract

3 cups all-purpose flour

1 teaspoon baking soda

3/4 cup white chocolate chips

3/4 cup vanilla chips

1 cup dried cranberries

Preheat oven to 375 degrees F. Grease cookie sheets.

In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and almond extract.
Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven.

  1. yum! i didn’t think i’d like it because i wasn’t sure about cranberries but it was really yummy, not too cranberry-ish. bah! i had no idea it was vanilla chips!


  2. Vanilla chips… are the same thing as white chocolate chips, but without the chocolate. Most times the term “white chocolate” is a misnomer since it’s not even real chocolate – no cocoa butter in in at all. According to wikipedia (http://en.wikipedia.org/wiki/White_chocolate), certain standards must be met for it to be called white chocolate, so looks like I used both kinds in these cookies!
