If you had Monday observed for Columbus Day (lucky you), you may or may not know that today, October 12, was the original Columbus Day which also happens to be my birthday!
I wanted to make my own birthday cake this year, so that’s exactly what I did. This is a matcha layered cake, and since I have yet to light the candles and make a wish, I can’t speak to how it turned out. But from quick observation, the cake did seem a bit dense — perhaps because I overworked the batter?
Well, after a much anticipated dinner tonight at Recette, I will certainly try the cake and update with any notes/modifications to the recipe. Here’s to another year of baking!
Matcha Birthday Cake
Ingredients:
1 3/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
12 Tablespoons (1 1/2 sticks) unsalted butter, softened
1 teaspoon vanilla extract
3 teaspoons matcha
3 eggs
1/3 cup buttermilk
2-3 cups matcha buttercream frosting
Directions:
1. Preheat oven to 350 degrees F. Butter two 9-inch round pans and line bottoms of pan with buttered parchment paper.
3. In a medium bowl, mix together flour, baking powder and salt.
4. Using a stand mixer, beat together butter, sugar, vanilla and matcha. Beat on medium for about 2 minutes.
5. Add in eggs, one at a time, and mix thoroughly after each egg.
6. Add flour mixture to butter mixture and beat on low until combined. Scrape down bowl.
7. Pour buttermilk into flour/butter mixture and beat on low until milk is absorbed. Scrape down bowl.
8. Add the rest of flour mixture into the bowl of the stand mixer and beat on medium for about 3 minutes.
9. Divide batter equally into both pans and smooth tops.
10. Bake for 20-25 minutes or until top and sides turn golden brown.
11. Remove from oven and cool cakes in their pans for about 5-10 minutes. Invert the cakes on a cooling rack and peel off parchment. Be sure to let cakes cool completely before frosting.
12. Assemble the cake by spreading frosting in between cakes as well as on top and all around.
13. Place candles on top and gather loved ones around for a birthday celebration.
